During the holiday season we normally panic since we have invited our whole families to enjoy dinner together on a Christmas evening/night, but let not this be a way of any means to stop you from enjoying your Christmas as I will be sharing dinner meals you can prepare and have a sense of relieve.
1. Lemon Chicken Orzo
Requirements:
- Pan
-Stove
-1 tb of butter
-1 tb of olive oil
- Half of a chopped onion
- Minced garlic
- Italian seasoning
- Cup of Orzo
- Chicken broth
- Heavy whipped cream
- Raw lemon juice
- Half cup of shredded parmesan
- Four cups of fresh spinach
- Shredded chicken
Instructions
- Add a tablespoon of butter to a hot pan.
- Add another tablespoon of olive oil.
- After the butter melts, add half of the chopped onion.
- Stir for about 5 - 6 minutes to let it cook.
- Add a tablespoon of minced garlic, along with the Italian seasoning and one cup of Orzo, then stir.
- Add two cups of chicken broth and a cup of heavy whipping cream & juice from one lemon, and stir.
- Leave it to cook while the pan is uncovered and stir it frequently for about twelve minutes.
- Add half a cup of shredded parmesan cheese & four cups of fresh spinach and stir to mix it well.
- You can now dish your meal.
2. Street Corn Chicken
Requirements:
- Bowl
- Oven
- Cans of drained street corn
- Mayonnaise
- Sour cream
- Chili powder
- lime
- Garlic powder, salt & pepper
- 3 medium-sized Chicken breasts
Instructions
- Add two cans of street corn into a bowl
- Add fourth a cup of mayonnaise
- Add another fourth of a cup of sour cream
- Add a teaspoon of chili powder
- Pour in the juice of half of a lime, and stir
- Aside, put three medium-sized chicken breasts in an oven bowl, sprinkle garlic powder, salt, and pepper on top of the chicken breasts
- Pour the corn mixture all over the chicken breasts, and place it in a preheated oven to bake at 350 degrees Celsius for about 30- 40 minutes
-Once cooked, take it from the oven, now you can dish it out and add toppings that you would love, and voila : )
You can also cook a side dish for these two meals which would be a great dish to flavour your meal.
White Rice
- Pour rice in a large bowl with hot boiling water
- After ten minutes, drain the rice from the water
- Pour two cups of water into a pot, add one tablespoon of oil, one teaspoon of salt
- Let the water boil
- Pour the rinsed rice into the boiling water
- Let the rice cook until no water is seen in the pot
Voila, that's all and now you can enjoy and impress your family with these fantastique dishes.
